Delicious and healthy snacks are always great to discover and add to the repertoire. As you probably know most muesli bars are very high in sugar and some could even be called junk food.
I found this receipe at the weekend in one of my many cookbooks – thank you Sally Joseph. I am already on my second batch as the kids love it. You can make it without the nuts if your kids can’t take them to school.
And if there are seeds and nuts that your kids don’t like you can leave them out. You may also like to see my pantry staples list for other yummy ingredients to add.
What you’ll need:
1 cup coconut flakes
½ cup of cashew nuts
½ cup of chopped almonds
½ cup of sunflower seeds
½ cup of pepitas
½ cup of sesame seeds
½ cup of chai seeds
½ cup of goji berries
1 tsp ground cinnamon
1 tsp ground nutmeg
2 tsp natural vanilla essence or powder
1 tsp of Himalayan or Celtic salt
2 tbsp virgin coconut oil melted
½ cup rice malt syrup
Preheat the oven to 180 deg C and line a 28 * 12 cm slice tin with baking paper
Place all ingredients into a mixing bowl and use your hands to mix together thoroughly
Transfer the mix to the baking tray and using your fingers or a spoon firmly press the mixture evenly to cover the bottom of the tray
Bake for about 20 mins or until golden brown.
Cool to room temperature, before cutting into slices.
